Hi CAL members,

I'm simply not going to comment on this beautiful Spring weather we are enjoying.

CAL's board met last Wednesday, April 4th. There was so much information shared, but I won't give details because the other ladies will want to tell you. However, we will be giving more grant funds and scholarships than any other past year. Wow....hurray.....pat yourselves on the back. We are awesome!!!

With that being said, I want to give a huge hug to the ladies who consistently work at BB. If you are not one of these hard working members I would like you to review your schedules and find three hours per month and sign up for open spots in our digital volunteer calendar if possible (that was instituted in March). We have 260 members and about 90 who support our mission statement monthly. Did you know that?

There are plenty of opportunities to help if three hours at the store are not possible. We have several new chairpersons looking for ladies to commit to their committees. Several board members are reaching out for new talent to fill their positions. Let's put our giving spirits ahead of the social events we enjoy. We are a family of wonderful women and gentlemen working together for a common goal. Families who work together stay together. We need you.

I am so looking forward to this year's Spring Luncheon. After this Luncheon, Tina and her committee will be turning their toilet paper rolls over to a new group of fun loving ladies. In honor of their Mexican Theme, here is a recipe for you to enjoy.

Mexican Rice and Black Bean Casserole
1 lb Bulk Pork Sausage2 14 oz cans Mexican style stewed tomatoes, undrained
2 C cooked white rice15 oz can black beans, rinsed and drained
1 medium green pepper, chopped  1/2 C shredded cheddar cheese

In a 12-inch skillet cook sausage until brown; drain fat. Stir in tomatoes, rice, black beans, and peppers. Spoon into a 3 quart rectangular baking dish.

Bake at 350 degrees for 40 to 45 minutes. Pull out of oven and sprinkle with cheese. Serve with sour cream, guacamole, salsa, as desired. Serve immediately. Enjoy.
